what is the cause of tomatoes splitting and also having a leathery skin texture as they reach maturity.

tomato splitting is due to sudden change in temperature,or ripe tomatoes being on the plant for long periods and irregular watering.

Tomato splitting could also be due to BORON deficiency in the soil. Pl. check

Tomato splitting may be due to irregular irrigation i.e. keeping the plant without watering for some days and then watering heavily.
Also may be due to heavy feeding of Nitrogenous fertilizer.
