India is the largest producer of guar seed in the world. It is drought tolerant,warm weather, deep rooted summer growing annual legume.It grows well in soils of low fertility,in the arid and semi arid areas of tropics and subtropics where the rainfall is summer dominant. In India, sowing season is the end of July and harvesting is done in November. It is 90 day crop. Average production of guar seed in the country is 10-11lakh metric tonnes and fluctuates based on rainfall pattern.Production of guar seed is concentrated in Rajasthan,Haryana,Gujrat and Punjab.Jodhpur city in Rajasthan is the important processing centre for guar gum and contributes 40 per cent of worlds guar gum supply. Global market of guar is Rs 1000 crore per annum. About 75 per cent of guar production is exported. There is a huge demand for guar derivates and extensively used in petroleum, textile, paper, food and pharmaceutical industry. Guar gum is used in Bakery industry for production of bread, as stabilizer and binder in icecreams,stabilizer for fruit drinks etc.
