Cottonseed and other oilseeds (such as sunflower seeds) have a similar structure, consisting of a hard shell covered with oily kernel (seed). Cottonseed oil is used in cooking oil, salad dressing, mayonnaise or potato chips and other snacks, taste and stability because it does not cover up the flavor, not easy fumes when heated.
