Dr. S.Uma, Director, ICAR – National Research Centre for Banana, Trichy, Tamil Nadu has expertise of 28 years as Researcher, Research Coordinator and Research Administrator. Her team works in the development of export protocol and optimizing long distance transport procedure besides developing AI/IoT based smart packaging methods and delivery systems. It involved in the process development for starch extraction and starch modification from green banana, development of nutraceuticals, encapsulation methods and targeted smart delivery vehicles for bioactive compounds, elucidation of the fundamental mechanisms beyond the nutritional and processing functionality of food and food ingredients. It also works on downstream processing and utilization of banana wastes for food and non-food applications.
