Dr. Rashmi H.B is Assistant professor (PHM) at College Of Horticulture, Mysuru, Karnataka. She says. “India being major producer of fruits and vegetables, post harvest loss is upto 18 to 20 %. Processing and value addition of these fruits and vegetables is less than 2%, which is very less compared to other countries. There is a lot of scope in entrepreneurial opportunities in post harvest management of fresh fruits and vegetables as well processing into different value added products such as beverages, candies, dehydrated products, jams, bioactive compounds extraction and many more”.
