Vinegar ( Sirka in Hindi )- it's basically a sour liquid (between a pH of 2 and 3.5) that's made from the fermentation of ethanol (alcohol).

Legend has it that centuries ago people discovered vinegar by accident after a cask of wine turned sour from being stored too long, and most likely from getting exposed to oxygen from improper storage. In fact, the word vinegar is derived from the old French vin aigre, which means sour wine. Not all vinegars start out as wine made from grapes, however. There is also rice vinegar (made from rice), malt vinegar (made from barley) and cider vinegar (made from apples), coconut vinegar ( made from coconut sap ), cane vinegar ( made from cane juice ), fruit and vegetable vinegar ( made from seasonal fruits and vegetables and artisan vinegar ( craft vinegar )

Currently only apple cider vinegar ( organic and conventional ) are being processed in India .

Going by the labels and the countries of origin on the bottles of vinegar available in the supermarkets and online shopping portals you would think that natural vinegars has never been produced in India.
Surprise! Country vinegar has been produced in India for a very long time for use in medicines ( called sirca) and food. Since vinegar can be produced from almost anything which has sugar or starch,
Each area made vinegar from different materials.
In Bengal from Jamun fruit ,Palmyra sap and mahua flower ; in U.P from sugarcane juice, from coconut sap in Goa.

Orange and pineapple vinegar was once available in India as a by- product of the fruit growing industry and it would be wonderful if the production of all those old types of aged vinegars were encouraged again. There are artisan vinegar producers all over the world.

Urban consumers are inclining more towards a healthy lifestyle, which has led to the higher consumption of food and food ingredients with potential health benefits. Currently, consumers have become more conscious about their diets, owing to which, they are spending on a holistic approach to health and wellness that includes almost every aspect of life. Natural vinegar is one such food product which has several health benefits associated with its consumption . The rising awareness about the health benefits associated with the consumption of the product helps drive the demand for the product in the global market .

Why not new generation agro business entrepreauners take initiative in processing natural vinegars for domestic and overseas market .
